How-To: Roasted Garlic

Calling all of my garlic lovers – this one’s for you. Here’s more of a method, rather than a recipe, for perfectly roasted garlic that you can add to or spread on just about anything your heart desires. Plus, it’ll make your kitchen smell delightfully comforting – and who doesn’t want that?!

What does roasted garlic taste like?

Roasting whole garlic is a fantastic way to add extra depth and flavor to a recipe. When roasted, it will still taste like, well, garlic, but will be slightly milder. Roasting garlic removes the sharpness and pungency of garlic, and it will develop a slightly sweet taste while it caramelizes in the oven.

What is the consistency of roasted garlic like?

As the garlic roasts and caramelizes, a creamy, buttery, and jammy consistency forms. This is what makes it so easy to use as a spread or to add to other dishes!

How to use roasted garlic?

You can toss roasted garlic in anything you’d normally put garlic in! Here are some fun examples:

  • Garlic Bread
  • Hummus
  • Pasta Sauce
  • Mashed Potatoes
  • Soup
  • Etc.!

How to Roast Garlic

Step 1: Remove the outer layers of skin.
This part is important! If you don’t peel off as many layers of skin as possible when you squeeze out the final product, there’s a good chance you’ll find pieces of skin in there, and that’s not the texture we’re going for here!

Step 2: Cut off the top of the head until the cloves are exposed.
This could be anywhere from 25%-50% of the bulb, as long as all of the cloves are peeking out. To avoid waste, add the discarded tops to a freezer bag to save for veggie broth.

Step 3: Drizzle the heads with oil.
Use your favorite, neutral-flavored oil here, and drizzle generously!

Step 4: Cover the bulbs with foil.
Loosely cover the bulbs in foil. If you cover the bulbs too tightly, the exposed garlic cloves may stick and you’ll lose some of that flavor!

Step 5: Roast at 425° for 60-70 minutes.
Feel free to roast longer for a crispier, more charred result! The goal is to get the exposed cloves nice and golden, so roast until you hit that sweet spot!

How to store roasted garlic

Store your roasted garlic in an airtight container and store in the refrigerator for up to 5 days. To preserve longer, you could submerge the roasted garlic in oil and keep it for up to 10 days. For quick, convenient use, store the roasted garlic in an icecube tray and freeze until it’s ready to be used.

Ingredients
  

  • 6 heads garlic
  • 3 tbsp oil

Instructions
 

  • Remove the outter layers of skin.
  • Cut the tops off the garlic heads until the cloves are exposed.
  • Drizzle oil onto the exposed cloves.
  • Cover with foil.
  • Roast at 425° 60-70 minutes.
