Air-Fried Buffalo Broccoli Stems

Don’t throw away those broccoli stems yet! Here’s a quick, healthy, and fun snack that can be made in just a few minutes to utilize those stalky stems and avoid food waste.

These Air-Fried Buffalo Broccoli Stems are:

Crunchy

& easy to make!

What you’ll need:

Broccoli Stems: the star of the show – sliced into coins.

Buffalo Sauce: to bring in the spice and the flavor!

Panko Bread Crumbs: for that crunchy goodness!

Almond Milk: to give the bread crumbs something wet to stick to

Flour: to thicken the almond milk and help the bread crumbs stick.

Paprika: for flavor and color.

Cayenne: also for flavor and color. This ingredient also adds a little more spice and is totally optional.

How to make Air-Fried Buffalo Broccoli Stems:

Slice the broccoli stems

Begin by slicing the broccoli stems into coins about 1/4th of an inch thick. You could trim the stems first by using a potato peeler, but this is completely optional.

Create the wet & dry mixtures

In order to bread these bad boys, you’ll need both a wet and a dry mixture. Use two separate bowls, and in the first bowl, combine the dry ingredients, which include the panko bread crumbs, paprika, cayenne pepper, salt, and a dash of buffalo sauce. In the second bowl, combine the wet ingredients – almond milk, all-purpose flour, paprika, buffalo sauce, and salt. Mix well so there are no clumps. The wet mixture is needed so the dry mixture will stick and create a crunchy coating.

Coat the stems

Place a cut broccoli stem in the wet mixture until it is completely wet, and then transfer it to the dry mixture until it is completely coated in the bread crumbs. Carefully transfer the coated end product to the basket of an air fryer. Repeat this process until all the stem chips have been used up.

Make sure to use separate hands for the dry and wet mixtures. If the dry mixture becomes too saturated with the wet mixture, it will become difficult to work with!

Air Fry

Air fry the stems in a single layer for 15 minutes at 375 and enjoy!

Ingredients
  

  • 16 oz broccoli Stems

Wet Ingredients

  • ½ cup almond milk
  • ½ tsp paprika
  • 2 tbsp buffalo sauce
  • ½ tsp salt
  • ½ cup flour

Dry Ingredients

  • ¾ cup panko bread crumbs
  • 2 tsp paprika
  • ¼ tsp cayenne
  • ½ tsp salt
  • 1 tsp buffalo sauce

Instructions
 

  • Cut the broccoli stems into ¼ inch coins
  • Mix the wet ingredients together in a bowl. Mix the dry ingredients together in a separate bowl.
  • Coat the stems in the wet mixture, and with a clean hand, evenly coat the stems in the dry mixture.
  • Air Fry the stems in a single layer for 10 minutes at 375°.
  • Enjoy!
