Just the pie filling… but in the form of hummus
Hummus is the best. Why? Because it’s so easy to make! And so versatile! So far this season, I’ve already purchased faaaar too many tubs of pumpkin spice hummus from Trader Joe’s. With hummus being as simple as it is, it was about time I come up with a recipe of my own!
How to Make Pumpkin Pie Hummus
This hummus is:
Add everything to a food processor or blender
It’s that simple. To your food processor or blender, add one 16-ounce can of garbanzo beans, one 16-ounce can of pumpkin puree, three tablespoons of tahini, 1/3 a cup of maple syrup or agave, 2 tablespoons of pumpkin pie spice, 1 tsp of cinnamon, 1/4 a tsp of salt, 1/4 a tsp of nutmeg, and finally, 1 tsp of vanilla extract.
Blend the ingredients for a couple of minutes until it reaches desired consistency.
Transfer, garnish and enjoy!
Top this hummus with a sprinkle of cinnamon and pumpkin seeds.
Serve with chips, apples, and graham crackers, or just simply eat it with a spoon!
Store leftovers in an airtight container in the refrigerator for up to 5 days. Stir before serving.
