Spinach, Cranberry & Pear Salad with Crumbled Tempeh

A delicious combo of spinach, pears, crumbled tempeh, dried cranberries and pistachios tossed in an maple-thyme balsamic vinaigrette.
Perfect as a main salad or as a side dish with a savory meal!

Ingredients
  

Salad Ingredients

  • 6 handfuls spinach
  • 2 pears, sliced
  • 1 block tempeh, crumbled
  • ¼ cup pistachio
  • ¼ cup dried cranberry

Maple-Thyme Balsamic Vinaigrette

  • tbsp neutral oil
  • tbsp balsamic vinegar
  • 1 tbsp maple syrup*
  • 1 clove garlic
  • 1-2 sprigs fresh thyme
  • salt & pepper to taste

Instructions
 

  • Add all the salad ingredients to a large bowl.
  • Add all the vinaigrette ingredients to a blender or food processor and blend for a minute to combine and emulsify.
  • Add the vinaigrette to the salad.
  • Enjoy!

Notes

Substitutions:
  • Maple Syrup: feel free to sub this for agave or any other liquid sweetener of choice.
