Wild Blueberry Oat Pancakes

Fluffy pancakes made with oat flour and wild blueberries.

Ingredients
  

  • 1 cup oat flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup applesace
  • ½ cup plant-based milk
  • 1 tsp vanilla extract
  • ½ tbsp apple cider vinegar
  • ½ cup wild blueberries
  • oil for frying

Instructions
 

  • Combine all of the ingredients except for the blueberries, adding the apple cider vinegar last.
  • Fold in the blueberries.
  • Heat 1 tbsp of oil over medium-low heat.
  • Once warm, scoop ¼ a cup of the batter to the pan to form a single pancake. Add as many scoops as your pan will allow.
  • Cook each pancake for 5 minutes on each side, and then flip to cook for the same amount of time on the other side, or until both sides are evenly cooked.
  • Repeat until all the batter is gone.
  • Add whatever toppings you'd like an enjoy!

Notes

Feel free to use frozen blueberries!
