Ingredients
  

Salad

  • 2 handfuls arugula
  • 4 figs, sliced
  • ½ block tempeh, crumbled
  • 2 tbsp walnuts
  • 2 tbsp green onions, sliced

Balsamic-Fig Vinaigrette

  • tbsp balsamic vinegar
  • tbsp neutral oil
  • 1 fig
  • 1 clove garlic
  • 1 tbsp maple syrup
  • ½ tbsp thyme leaves
  • Pinch of salt

Instructions
 

  • Combine all the salad ingredients in one bowl.
  • Place all the vinaigrette ingredients in a food processor or blender and blend until emulsified.
  • Pour desired amount of dressing onto salad.
  • Enjoy!
