Sunshine (Ginger & Turmeric Spiced) Baked Oats
One-pan, baked oats filled with fresh ginger, turmeric, flaxmeal and shredded coconut.

- 3 cups oats
- 2 ¾ cups plant milk
- ½ cup applesauce
- ¼ cup ginger finely minced
- ¼ cup dried coconut flakes
- ¼ cup maple syrup
- 3 tbsp ground flax seeds
- 1 tbsp turmeric
- 1 tbsp coconut oil
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- Pinch of Salt
- 1 banana (Optional for garnishing)
Combine all the ingredients in a 9x5 loaf pan.
Bake at 350°F for 40-45 minutes or until you can insert a tooth pick in the center & it comes out clean.
Cool for at least 10 minutes.
Enjoy!
Use any size baking pan you’d like, but you will have to adjust the cooking time accordingly.
If you are not a huge ginger and turmeric fan, decrease the original recipe amount for a more mild flavor.
