Sunshine (Ginger & Turmeric Spiced) Baked Oats

One-pan, baked oats filled with fresh ginger, turmeric, flaxmeal and shredded coconut.

Ingredients
  

  • 3 cups oats
  • 2 ¾ cups plant milk
  • ½ cup applesauce
  • ¼ cup ginger finely minced
  • ¼ cup dried coconut flakes
  • ¼ cup maple syrup
  • 3 tbsp ground flax seeds
  • 1 tbsp turmeric
  • 1 tbsp coconut oil
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of Salt
  • 1 banana (Optional for garnishing)

Instructions
 

  • Combine all the ingredients in a 9x5 loaf pan.
  • Bake at 350°F for 40-45 minutes or until you can insert a tooth pick in the center & it comes out clean.
  • Cool for at least 10 minutes.
  • Enjoy!

Notes

Use any size baking pan you’d like, but you will have to adjust the cooking time accordingly.
If you are not a huge ginger and turmeric fan, decrease the original recipe amount for a more mild flavor.
